I love chicken salad and this one is hands down my favorite! This recipe is straight out of the new Fixate cookbook written by Autumn Calabrese (the trainer who developed the 21 Day Fix and 21 Day Fix Extreme programs). I have been incorporating the 21 Day Fix Extreme eating plan and workouts into my daily routine and this cookbook has been a life saver! It contains 101 healthy recipes that are all designed to be used with the portion control containers from the program. Some of the recipes are also vegan, vegetarian, paleo, and gluten free. Hmmmm….What?!? That’s right, I tried Freekeh and it is one of my new favorite grains! You may be wondering what Freekeh is. Freekeh is an ancient roasted grain that has an awesome nutty, chewy texture. What’s more, Freekeh has up to 3 times the amount of fiber and protein as brown rice and is naturally low in sodium and it’s vegan! Not to mention that it is certified organic, Non GMO, and grown in the USA.
So what do you do with Freekeh? So far I have used it in my chicken stir fry and made a Mexican salad with it. Yum! It would also be great in soups, pilafs, salads, chilis, stews etc…The possibilities are endless!
Do you love Greek yogurt? I do! I recently had the opportunity to try the new Plenti Greek Yogurt from Yoplait. I was excited to try this yogurt because Plenti Greek yogurt is made with whole grain oats, flax seeds, pumpkin seeds and delicious fruit mixed right in. Plus it’s packed with protein and lower in sugar than some of the other Greek yogurts on the market (Plenti Yogurt has a 1:1 protein to sugar ratio…12g of each). It’s the perfect snack!

What is Shakeology and why did I start drinking it? Those are great questions. I will start by telling you that I was not a huge fan of protein/meal replacement shakes. I had bad experiences with other popular shakes and I was very hesitant to try Shakeology. The more that I researched Shakeology, the more I became intrigued. I am so excited to share this recipe with you! I love quinoa and I’m always looking for good recipes that my kids will enjoy too. This one is a hit! I love making these because they are simple to make, packed with protein, and they freeze well. They are the perfect size for kids too! I hope your family enjoys these quinoa cups as much as we do!
This is on of my favorite side dishes to make. Sometimes I even add some grilled chicken and eat it for lunch. I love it because it is simple to make, only has a few ingredients and is packed with protein, fiber, iron, magnesium, B2, folate, calcium, zinc, Potassium, and Vitamins K and A (to name a few!!!). Did you know that quinoa contains more vitamins, nutrients, and antioxidants than any other grain? It does! Spinach and mushrooms also contain abundant nutrients so you can’t go wrong with this dish! With the holidays here, we have been going to a lot of holiday parties and cookie exchanges. I will be making some traditional Christmas cookies in the upcoming weeks, but I will also be making these healthy alternatives as well.
