I love peanut butter! It is actually my weakness! It is an easy way to add extra protein into my diet and it tastes delicious in shakes, dips, baked goods, oatmeal, and just about anything else you can think of! The peanut butter lover in me was so excited when I was given the opportunity to test out and create recipes using the Peanut Butter & Co’s powdered peanut butter, MightyNut. Continue reading
Last week I posted about a new ancient grain that I tried called Freekeh. I really like this product and I have been experimenting with a few recipes. I came up with a delicious Greek Freekeh Salad and I wanted to share it with you! Continue reading
Hmmmm….What?!? That’s right, I tried Freekeh and it is one of my new favorite grains! You may be wondering what Freekeh is. Freekeh is an ancient roasted grain that has an awesome nutty, chewy texture. What’s more, Freekeh has up to 3 times the amount of fiber and protein as brown rice and is naturally low in sodium and it’s vegan! Not to mention that it is certified organic, Non GMO, and grown in the USA.
So what do you do with Freekeh? So far I have used it in my chicken stir fry and made a Mexican salad with it. Yum! It would also be great in soups, pilafs, salads, chilis, stews etc…The possibilities are endless!
Do you love Greek yogurt? I do! I recently had the opportunity to try the new Plenti Greek Yogurt from Yoplait. I was excited to try this yogurt because Plenti Greek yogurt is made with whole grain oats, flax seeds, pumpkin seeds and delicious fruit mixed right in. Plus it’s packed with protein and lower in sugar than some of the other Greek yogurts on the market (Plenti Yogurt has a 1:1 protein to sugar ratio…12g of each). It’s the perfect snack!
Let’s talk meal plan and prep! Sunday is the day that I use to meal plan and prep, so I wanted to share my tips on meal planning and preparation. This is a very important part of eating healthy, especially for people who are on the go, working, or busy all day! It will help you stay on track and make healthy choices throughout your day.
We went berry picking over the weekend and we picked over 6 pounds of blueberries! The first thing that my family wanted me to make was blueberry crisp. Well, I used to make my blueberry crisp with sugar…and a lot of it. Eek! I experimented and came up with a healthier alternative and I wanted to share it with you. Continue reading
It’s Friday and I have another amazing woman that I am featuring on my blog. I was so exited when Stephanie from Love Living Whole agreed to do a guest post for me. I love following her fitness and Whole 90 journey. Not to mention that I love checking out her Target and Trader Joe’s finds! Today she will tell you a little about herself and share a delicious recipe for roasted bok choy! Continue reading
It’s summer and we have a few vacations planned. We will be heading off on a family vacation this week and it is the first trip that we have taken since our 7 year old outgrew his milk allergy. This is a HUGE relief, but it also means that now we will be preparing less food at the hotel and eating at restaurants more often. The boys are excited about this, but I still want them to have some healthy snacks for the 3 hour road trip, the amusement parks, beach, zoo and parks. So here are a few of the travel snacks that I am taking along with us.
Hydration is so important, especially during the summer months when its hot and we are more active outside. Personally, I drink a lot of water! I mean ALOT! Plain water can get boring, so I like to infuse my water with fruits, vegetables and herbs. Infused water is a great replacement for soda, tea, juice, and sports drinks. Making your own infused water is very easy to do and the flavor combinations are endless!
Strawberry season has officially begun and I can’t get enough of these sweet berries. Every June we have a family tradition of going strawberry picking at a local farm and the kids love it. We usually end up with strawberry juice stains on our clothes and lots of delicious berries to bring home. So what do I do with all of these strawberries (and we have a lot! Its amazing how quickly 2 boys can pick strawberries)? Continue reading
