Are you a peanut butter lover like me? If you are, you need to try these healthy Peanut Butter Chocolate Chip muffins. Fellow fit mom and owner of Blissful Eats, Nicole Culver, shared her recipe for these peanut butter chocolate chip muffins with me. Since I love the combination of peanut butter and chocolate, I was super excited to try these. They are delicious, made with healthy ingredients, and kid approved! Today I am sharing the recipe with you (with her permission of course!) and I hope you give them a try!
Peanut Butter Chocolate Chip Muffins
Ingredients:
- 2 cups whole wheat flour
- 1/4 cup turbinado sugar
- 1/4 cup pure maple syrup
- 1 cup unsweetened applesauce
- 1/4 cup milk of choice
- 1/2 cup oats
- 1/2 cup peanut butter
- 1 Tbsp melted coconut oil
- 2 eggs
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 cup dark chocolate chips (I used Enjoy Life chocolate chips)
Directions:
Preheat the oven to 350 degrees. In a large bowl, add all dry ingredients (whole wheat flour, sugar, oats, baking powder, baking soda, cinnamon and salt). Add in wet ingredients (maple syrup, applesauce, milk, peanut butter, coconut oil, vanilla extract, egg) and mix to combine. Make sure peanut butter is mixed throughout. Add in chocolate chips. Stir. Spray muffin tins or use paper liners. Scoop batter into muffin tins using 1/3 cup measure. If desired, sprinkle each muffin with a bit of turbinado sugar. Bake for 20-23 minutes or until toothpick comes out clean. Enjoy!
