Do you and your kids like granola bars? We are big fans of granola bars here! They are a quick grab and go snack and are the perfect lunch box treat! But have you read the labels on some of those store bought granola bars? Many of them are loaded with sugar, artificial ingredients, preservatives, and many unnecessary added ingredients. That is why I decided to make my own homemade granola bars.
These homemade granola bars are a great healthy snack for kids. There is no baking involved so they can help you make them! The bast part is that you get to control the ingredients that go into them. My kids like chocolate chip granola bars, but you can add in shredded coconut, dried fruit, different chopped nuts etc… I used peanut butter, but you could swap that out for a different nut butter or use SunButter if there are allergies in the family or if nuts are not allowed in your child’s school. You can really customize them to your liking!
Homemade Chewy Granola Bars
- 2 cups old fashioned oats (uncooked)
- 1/2 cup all natural peanut butter (warmed)
- 1/2 cup raw honey
- 1/2 cup chopped almonds
- 1/2 cup mini chocolate chips or cacao nibs (I used Enjoy Life mini chocolate chips)
- 1/2 Tbsp pure vanilla extract
Combine all ingredients in a medium sized mixing bowl until thoroughly combined. Press mixture firmly into a 9×13 glass baking dish. Place in the freezer for a minimum of 2 hours. Remove from the freezer and slice into bars or squares. You can also roll the mixture into 1″ balls if you prefer that over the bars. Store in an airtight container in the refrigerator for up to 1 week. You can also individually wrap them, put them in Ziplock bags, and store them in the freezer. Then pop them into your child’s lunch box and they will be thawed out by snack time!
As you can see they are a bit hit in our house!
