Creamy Chicken Salad


I love chicken salad and this one is hands down my favorite! This recipe is straight out of the new Fixate cookbook written by Autumn Calabrese (the trainer who developed the 21 Day Fix and 21 Day Fix Extreme programs).  I have been incorporating the 21 Day Fix Extreme eating plan and workouts into my daily routine and this cookbook has been a life saver! It contains 101 healthy recipes that are all designed to be used with the portion control containers from the program.  Some of the recipes are also vegan, vegetarian, paleo, and gluten free.  A little something for everyone!


I am so excited to give you a sneak peek at one of the recipes in the Fixate cookbook. This creamy chicken salad is delicious, made with healthy ingredients, and so easy to make. I was unsure at first about adding fruits to my chicken salad, but I  love the sweet and savory flavors together. I have been making a big batch of it and my husband and I have been eating it for lunch.  It’s great on a bed of lettuce, in a whole wheat wrap, on a piece of Ezekiel bread or eaten all by itself.  The honey mustard salad dressing is amazing too! My boys love to dip their chicken in it and it’s so much healthier than any store bought honey mustard dressing. This recipe is a winner!

Creamy Chicken Salad

  • Servings: 4

Ingredients For Chicken Salad:

  • 3 cups cooked chicken breasts, chopped (I use a cooked rotisserie chicken breast)
  • 1/2 cup chopped green apple
  • 1/2 cup seedless red grapes, cut in half
  • 1/3 cup sliced raw almonds
  • 2 green onions, sliced
  • 2 Tbsp fresh, chopped tarragon (I omit this since my husband does not like it)
  • 1/4 cup honey dijon mustard (see recipe below)

Directions To Make the Chicken Salad

Combine chicken, apple, grapes, almonds, green onions, tarragon, and honey mustard salad dressing in a large bowl.  Mix well. Refrigerate, covered, for 2 hours.

Ingredients For Honey Mustard Dressing:

  • 1/2 cup reduced fat (2%) plain Greek yogurt
  • 3 Tbsp Dijon mustard
  • 3 Tbsp raw honey
  • 3 Tbsp rice vinegar
  • 1/4 cup extra virgin olive oil (I actually decrease the oil by half and it is still delicious!)

Directions To Make the Honey Mustard Dressing:

Combine yogurt, mustard, honey and vinegar in a medium bowl.  Mix well. Slowly add oil, whisking constantly until well blended. Season with salt if desired.

  3. I’m just getting started with 21 day fix. I bought the containers and am trying to find recipes. I think this will be a good start for lunch next week. What is my portion size? Can you tell me how this will count in my containers? Thank you!


    • Hi Stephanie! You will love the 21 Day Fix. The portion size is 1 1/4 cup and counts as 1 green (lettuce) 1/2 purple (grapes and apple), 1 red (chicken), 1/2 blue (almonds), and 1/2 orange (salad dressing). Hope that helps 😊


  4. How long does this last in the fridge until it starts to get icky?
