Greek Freekeh Salad

Last week I posted about a new ancient grain that I tried called Freekeh. I really like this product and I have been experimenting with a few recipes.  I came up with a delicious Greek Freekeh Salad and I wanted to share it with you!  

Here’s a little information on Freekeh in case you missed my last post.  Freekeh is an ancient roasted grain that has an awesome nutty, chewy texture. What’s more, Freekeh has up to 3 times the amount of fiber and protein as brown rice and is naturally low in sodium and it’s vegan! Not to mention that it is certified organic, Non GMO, and grown in the USA.

My husband and I really like Greek salads, so I decided to try to make my own Greek Freekeh Salad.  If you like Greek salads you should give this a try! Here’s the recipe:

Greek Freekeh Salad

  • Servings: 4
  • Difficulty: Easy

Ingredients For Salad:

  • 1 cup Original Freekeh
  • 2 1/2 cups water
  • 1 English cucumber; rinsed and diced
  • 1 pint of cherry tomatoes; rinsed and cut in half
  • 1/2 cup Feta cheese

Ingredients for Greek Dressing:

  • 1 garlic clove minced
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup red wine vinegar
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra virgin olive oil

Directions For The Salad:

Add the Freekeh and water to a large saucepan and bring to a boil.  Cover, reduce heat, and simmer for 20-25 minutes.  While the Freekeh is cooking dice your tomatoes and cucumber and make your Greek dressing (see directions below). When the Freekeh is done cooking place in the refrigerator to cool.  When done cooling, add in the tomatoes, cucumber, Feta cheese and dressing.  Stir until all ingredients are combined.  Serve as a side with your choice of protein (grilled chicken marinated in additional Greek dressing would be a great addition) or eat alone as a salad. Enjoy!

Directions For The Dressing:

Combine garlic, oregano, salt, pepper, red wine vinegar, and lemon juice in a bowl.  Using a whisk, slowly add in the olive oil while whisking.  Continue whisking the ingredients together until all of the ingredients are fully combined.
