It’s Friday and I have another amazing woman that I am featuring on my blog. I was so exited when Stephanie from Love Living Whole agreed to do a guest post for me. I love following her fitness and Whole 90 journey. Not to mention that I love checking out her Target and Trader Joe’s finds! Today she will tell you a little about herself and share a delicious recipe for roasted bok choy!
My name is Stephanie, and I am a mom of two – Charlotte and Jackson. I have been eating a mostly Paleo lifestyle for a little over two years, but my kids do not eat Paleo. I love to cook, practice yoga, run, garden and I am also a Fitfluential Ambassador. I can do a grocery haul like it’s my job, and I have a serious coffee and Target problem! Right now I am currently doing seventh Whole30, and have extended it to a Whole90.
I love to cook for my family. Making easy dishes that don’t require a lot of ingredients are my kind of meals, and a bigger plus is less dishes!
Now that our local farmer’s market is open, I can do all my produce shopping there. I picked up some bok choy to roast in the oven. This side dish is great with grilled chicken, and even with a baked fish.
Ingredients:
- Three heads of bok choy – cleaned
- Avocado oil (or oil of your choice)
- Salt & Pepper
- Baking sheet
- Parchment paper
Instructions:
- Preheat oven to 375 degrees
- Place the bok choy on the baking sheet covered in parchment paper
- Drizzle with avocado oil
- Season with salt & pepper
- Bake for 15 – 20 minutes (depending on how crispy you want your bok choy)
- Enjoy!
This an easy side dish to make, and minimal clean up! My kind of meal! If you have left overs, this is also great to add to a stir fry!
